Behind Every Sip: The Journey of Our Italian Sweet Red
Our Italian Sweet Red begins its journey with hand-picked grapes, carefully selected and harvested in small baskets from the lush vineyards of Mango, Italy. These grapes undergo a meticulous process, starting with destemming, squeezing, and a 24-36 hour maceration period on skins to enhance their rich flavors, followed by pressing. The must is then filtered and refrigerated to halt fermentation, preserving the grapes' natural aromas.
As demand dictates, we initiate production, warming the must to 20°C in pressurized, temperature-controlled vats. Fermentation begins with the introduction of selected yeasts, converting sugars into alcohol until reaching the ideal 7% alcohol content. This process is halted by cooling the wine, ensuring a harmonious balance of acidity, sugars, and alcohol. Microfiltration sterilizes the wine, ensuring purity and freshness before it's finally bottled, ready to be enjoyed.

Our Italian Sweet Red, lightly frizzante, offers a bouquet of rose aromas and the tantalizing essence of rhubarb-strawberry pie. Each sip reveals layers of raspberry and cherry flavors, culminating in a rich midpalate and a lingering, complex finish. This wine strikes a perfect chord between sweetness and acidity, making it a versatile companion to desserts, particularly fruit-based treats, or as a refreshing aperitif. For an optimal experience, serve chilled at 6-8°C in a round glass.
